Creamy Pumpkin Soup

This is my favorite time of year. The smell of deliciousness is in the air. Families are gathering and coming together with food. This year treat yourself and your family to  this  delicious fall style Creamy Pumpkin Soup. It's perfect for this holiday season. A Soup to warm the soul.

Creamy Pumpkin Soup

30g Carrots peeled and cut into chunks
30ml Olive Oil
Saute Carrots 1 - 2 minutes
Peel and Chop 1 medium Onion - Add it to the skillet with the Carrots and mix
Peel and Cut 800g of ripe Pumpkin into cubes (substitue: Butternut Squash)
Add it to the Carrots and Onions - Saute for 5 - 10 minutes more
Peel and Cut 1 Garlic Clove and add it to the skillet
Saute Vegetables for 5 - 7 minutes until tender
Cover and Continue for 2 minutes more
Transfer Vegetables to large sauce pan
Add 1 liter of Water and Salt
Add 1 teaspoon grated Nut Meg
Peel and Cut 20 - 40g of Fresh Ginger, add it to the pot
Puree soup with a hand mixer or upright blender
Add 100ml of cream
Bon Appetit!
Give it a stir serve with Fresh Greens and Sour Cream
(substitute: Coconut Milk)
